Most frequently, I will be asked to attest and notarise signatures to powers of attorney to be granted as a deed. Immigration documents also usually require a signature in front of a notary public. Part of my role when witnessing a signature is to ensure that the person signing the document is the person required to sign the document; and that, as signatory, you are doing so of your own free will and without coercion by another person.
